rainbow spring rolls recipe

the best thing about spring rolls is that they are able to be totally your own and catered to your own preferences! we include a list of the ingredients we use as an idea but feel free to add in whatever you prefer!

INGREDIENTS

  • 2 c. shrimp : cooked + deveined

  • 1 purple cabbage : sliced

  • 3 large carrots : sliced long way

  • 1 bell pepper : sliced long way

  • 1 mango : sliced long way

  • 1 jalapeño : sliced long way

  • 1 cucumber : sliced long way

  • 3 green onions : sliced long way

  • 1/4 c. mint

  • 1/4 c. cilantro

  • 1 package of rice paper wrappers

  • large bowl/pan of water

  • sesame seeds : to taste

  • 1/2 - 1 c. Thai peanut sauce : for dipping (amount is dependent on preference)

INSTRUCTIONS

you’ll want to start by cooking and deveining (if necessary) your shrimp. let the shrimp cool fully before using them in the spring rolls.

next, chop up all your veggies and slicing them the long way so they cover the length of the spring roll.

once everything is all chopped up, get out a bowl or shallow pan (with edges) and fill it with water. this is where you will dip your rice paper wrappers.

get out a cutting board to place your wet rice papers when ready. grab a single rice paper wrapper and dip it in the water, flip it and dip it again. the whole process should be ~10-15 seconds.

place your wet rice paper wrapper on your cutting board, and fill with your favorite ingredients! we start with our shrimp on the bottom, then add the veggies as we go! it’s great because each roll can be different or cater to each person’s preferences.

a couple of our favorite combos are: shrimp, mango, cabbage, jalapeño, cucumber + mint OR shrimp, cabbage, carrot, cucumber, green onion, cilantro!

you’ll want to place your items just slightly below the middle. start by folding over the bottom of the rice paper wrapper (the part closest to you) and fold it over the fillings. roll in the sides of the rice paper wrappers (like you would a burrito!) and then continue to roll the spring roll and make sure everything is enclosed within the rice paper wrapper. set to the side and get working on the next one!

the one thing you’re not going to want to forget is the peanut sauce. because, as we like to say, it’s all about the sauce. luckily, we’ve created the best peanut sauce recipe out there—no seriously, our friends rave about it and request that we bring the peanut sauce every time. it’s just that good. for awhile it felt almost too sacred to share? but then we realized that wasn’t fair to the rest of the world, so! you can find that recipe here.
