my go-to salad !

this salad is so my go-to salad. I make this at least once a week and it never misses. it’s super easy to make, uses simple ingredients, and has so much flavor.

INGREDIENTS

Protein

  • 1/3 c. pistachios : chopped

  • 1/4 c. parmesan cheese : shaved

Fat

  • 1-2 Tbsp extra virgin olive oil (EVOO)

  • 1/2 medium avocado : sliced into cubes

Carbs

  • 2 c. kale : sliced if purchased whole

  • 1/4 c. cucumbers : cut into fourths

Spice

  • salt+pepper : to taste

  • 10 leaves mint : sliced

  • 1/2 medium lemon: juiced

INSTRUCTIONS

it’s a pretty simple process here! start by chopping up your kale and adding it into a bowl with you EVOO. massage the EVOO into the kale for ~ 3 minutes. I know this sounds wacky, but the point of massaging is to break down some of the tough, fibrous characteristics of kale. doing this will make it easier to chew and digest, and makes for a more tender salad. after that, all we need to do is chop everything else up—cucumbers, pistachios, avocado, and mint—and add it into a bowl. squeeze your lemon juice over the top and season with salt and pepper. grab your tongs or your salad spoons and mix it all up! top it off with shaved parmesan and enjoy!
