healthier no-bake Twix bars recipe !

we’re transforming one of our favorite childhood sweet treats into a healthier version of itself. and not to toot our own horns but…these are top-notch. (toot, toot!)

INGREDIENTS

  • 1 c. fine almond flour

  • 1/4 c. cassava flour

  • 1 tbsp maple syrup

  • 1 tsp vanilla

  • 10 dates

  • 1/4 c. hot water

  • 1 dark chocolate bar : melted

  • 1 tbsp coconut oil

INSTRUCTIONS

you’ll start by making your base (this will represent the shortbread of the Twix bar). you’ll do this by combining both flours, maple syrup, and vanilla in a bowl. stir to combine. you should have a crumbly mixture. transfer this mixture to a freezer-safe dish. we used a 9x9” dish. press the mixture down flat until its an even, smooth surface.

next you’ll move onto the “caramel filling” part of the twix. add your dates and hot water to a heavy duty blender or food processor. we recommend using a smaller blender (a nutribullet will work fine) or food processor. you should have a thick paste-like substance. transfer this to the same dish and spread into an even, smooth layer on top of your “shortbread”.

lastly, you’ll add your chocolate top layer! all you need to do is break up a dark chocolate bar into a microwave-safe bowl with your coconut oil and microwave for ~30 seconds. your chocolate won’t be fully melted at the end of those 30 seconds but once you take it out, continue to stir the chocolate and it should melt. if you think it needs a little more time, throw it in for 10 more seconds, but don’t do too long or you’ll burn your chocolate.

once your chocolate is all melted, throw it on top of your “caramel” mixture and smooth it down to be an even layer.

throw your soon-to-be Twix bars in the freezer for at least 2 hours.

once those 2 hours are up, grab a knife and cut your Twix into slices and VOILA!
