Spicy Stuffed Bell Peppers

1lb ground turkey :: can sub for beef or bison

1 egg

6 bell peppers :: any color

1 cup cooked rice

spinach :: 1 cup

mushrooms :: basket, chopped

garlic :: 3 cloves

1 red onion :: diced

1 jalapeño :: diced and slices to top them off

3 tbsp olive oil

1 1/4 c. cheese of your choice :: our favorite is unexpected cheddar from Trader Joe’s or pepper jack cheese!

what to do

Start by preheating your oven to 350*F

While the oven is preheating, cut the tops off your bell peppers and remove the stems and seeds.

Place the peppers cut-side up in a baking dish that will allow them to stay upright (like the one in our photo above).

Heat 2 tbsp of olive oil in the pan over medium-high heat. Add the ground turkey (or your meat of choice) and season with salt and pepper, cook until it’s beginning to brown. Once done, remove the meat from the pan.

Add in 1 tbsp of olive oil to the pan and add in the chopped onion and cook until sautéed. Add in the garlic, mushrooms, and jalapeño for a few minutes then add in the spinach. Cook until everything is heated through, then stir in the turkey and rice. Stir in 1 cup of cheese

Fill the peppers with the turkey and rice mixture and top each with a sprinkle of the remaining 1/4 cup of cheese. Add a small amount of water to the bottom of the baking dish and drizzle the peppers with a little olive oil. Cover with foil and bake for 30min. Uncover and bake until the peppers become soft and the cheese is melted and slightly browned, about another 15-20 minutes.
