Oven-Roasted Tomato Soup

INGREDIENTS

Fat

  • 1/4 c. olive oil

  • 3 Tbsp coconut cream or milk : canned // whatever you prefer!

Carbs

  • 10 roma tomatoes : chopped into fourths

  • 1 yellow onion : chopped into fourths

  • 2 c. vegetable broth

Spice

  • 2 heads of garlic

  • 1/2 c. basil leaves : packed

  • 1/2 tsp dried oregano

  • salt + pepper : to taste

    • ~1-3 tsp each

INSTRUCTIONS

the weather has been unreasonably rainy and boy does this meal just warm up my heart and soul. it’s nostalgic but but with a fresh twist. no more canned soup for me—this homemade oven-roasted tomato soup is so quick and easy and genuinely so worth it to make your own.

you’ll need a heavy-duty blender (we love our vitamix!) or immersion blender (this one is a great, affordable option!) to make this recipe.

start by preheating your oven to 400*F. next you’ll get out your cutting board and chop up your veggies. cut all your tomatoes into quarters, as well as your one onion. cut off the tops of your garlic but do not separate the cloves from the bulb. place everything on a baking sheet. place your basil leaves on the pan as well. drizzle a generous amount of olive oil over everything—and really soak the garlic! sprinkle with salt and pepper and throw it in the oven! these veggies will roast for 40min.

once done, remove from the oven and transfer into your heavy-duty blender or a large pot to be blended using an immersion blender. you’ll want to squeeze out the cloves from the bulbs now and leave behind the skin. since these are fresh out of the oven, I suggest using a pair of tongs to do you squeezing! works like a charm.

once you have all your veggies are in your blender, add in your vegetable stock, coconut cream or milk, and your spices. blend it all up until smooth.

transfer to a pot to reheat to desired temperature, and once reached, scoop your serving into a bowl, garnish as you please, and strongly suggest serving with a side of homemade grilled cheese for maximum cozy vibes.
