greek-style rice

one of our favorite ways to spice up a meal is by zhuzhing up the side of rice ! adding a little flair to your rice levels up the entire meal. this one is a greek-style rice that we served with our greek-style chicken, some greens, and roasted veggies ! yummy!!

INGREDIENTS

  • 2 tbsp extra-virgin olive oil

  • 1 small onion :: finely chopped

  • 2-3 cloves of garlic :: pressed

  • 1 c. white rice :: preferably long grain + thoroughly washed

  • 2 c. chicken broth (or water) but broth adds more flavor // bonus if you bone broth and get extra protein in!

  • 1 lemon :: freshly squeezed

  • 1/2 tsp salt

  • 1/4 freshly ground black pepper

  • 1 tbsp dried dill/dillweed

  • 1/4 c. fresh parsley

  • 1 tbsp fresh dill

INSTRUCTIONS

start by heating up the olive oil in a pan. add in your chopped onion—let cook for 3-4 minutes, until translucent. stir in the garlic and cook for another 30 seconds or until aromatic.

add in the uncooked rice and cook (without liquid) until the rice becomes almost translucent.

add the broth, lemon juice, salt, pepper and dill weed to the pot. cover the pot with a lid and bring to a light boil. once there, turn down to simmer and let sit 25 minutes or until rice is tender. the liquid should be fully absorbed. remove the rice from heat and leave it covered, undisturbed for another 10 minutes.

uncover the pot and fluff with a fork or spatula. stir in the fresh parsley and dill.
