Winter Seasonal Eating

For a quick recap—foods that are in-season contain vitamins, minerals, and other nutrients that your body specifically needs for that current season. For example, in the winter we need extra Vitamin C to boost our immune system and keep sickness away. Citrus fruits like oranges, lemons, limes, and grapefruits, which are in season in the winter, are extremely high in Vitamin C and antioxidants that keep your immune system strong!
What to Eat:
Hearty root vegetables like potatoes, sweet potatoes (also called yams), turnips, rutabagas, and carrots are readily available all winter long. These nutrient-packed vegetables are perfect for a wide variety of warm dishes, and can be mashed, roasted, sautéed, baked, and more.
When you’re craving those warm, comforting dishes in the winter, winter squash is a seasonal favorite that can be used in soups, casseroles, and whatever else you’d like. And for all you leafy greens lovers, now’s your time because kale, fennel, and broccoli rabe are at their best during the wintertime. Likewise, cabbage tastes best when picked during cold weather.
Onions, shallots and leeks are typically harvested during the late fall and stay fresh throughout winter. Other tasty veggies to enjoy during the winter months include radishes, brussels sprouts, cauliflower, celery, parsnips, beets, and broccoli.
