recipe :: new zealand style fresh blueberry ice cream

ingredients

  • 1 cup fresh blueberries (plus extra for garnish, optional)

  • 2 cups milk—we use 1.25 cups raw milk and 0.75 cup heavy cream for a richer texture

    • use your preferred milk(s) here—raw, whole, coconut, etc.

  • 2 tbsp sugar (adjust to taste)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon lemon juice (to enhance the blueberry flavor)

  • pinch of salt

  • 1 teaspoon cornstarch (optional, for creaminess)

instructions

make the base ::

  1. in your ninja creami pint, mix together the milk (and cream if using), vanilla extract, and a pinch of salt. if you want a creamier consistency, dissolve the cornstarch in a little cold milk and stir it into the mixture.

  2. mix in the blueberries and squeeze of lemon juice. make sure the contents do not exceed the “max fill” line.

freeze ::

  1. freeze the container upright for at least 24 hours, or until fully solid.

process in the Ninja Creami ::

  1. take out your frozen mixture and place the pint container in the Ninja Creami machine, following the manufacturer’s instructions.

  2. select the “Ice Cream” mode and let the machine process the frozen mixture.

adjust texture ::

  1. if the ice cream looks crumbly after processing, you can add a tablespoon of milk and run the "Re-spin" cycle to make it creamier.

serve ::

  1. scoop the ice cream into bowls or cones. serve over your favorite crumble (ahem, our yummy gluten-free peach crumble is the best!) or enjoy on it’s own with some extra fresh blueberries on top!
