Protein Cookie Dough Balls

⅓ c. Cashew Butter : you can sub any nut/seed butter but be sure to use natural

2 tbsp Coconut Oil : melted

2 tbsp Manuka Honey

½ tsp Vanilla Extract

2 tbsp Coconut Milk : can sub for almond milk

½ c. Bob’s Red Mill Gluten Free 1-to-1 Baking Flour

½ c. SFH Coconut Whey Protein : can sub for your favorite powdered protein

½ tsp Pink Himalayan Salt

¼ c. Enjoy Life’s Mini Chocolate Chips

Sprinkle of Cinnamon 

Sprinkle of Coconut Flakes

Mix together wet ingredients in a large bowl. After all the wet ingredients are mixed together, mix in the dry ingredients one at a time. 

Once evenly mixed, grab a spoon and scoop out about a tbsp of the “cookie dough.” you have the dough in your hand, roll the dough into a ball—they should be about 1 inch big. Lay the balls evenly spaced on parchment paper. To finish you’ll sprinkle with cinnamon, and place in the freezer for 30mins to harden. Once hardened, sprinkle with coconut flakes + enjoy!

This recipe will make 12 protein cookie dough balls.
