mayo-free egg salad meal prep!

egg salad is one of my favorite things to meal prep! i swear it just tastes better after each day. this recipe doesn’t take much (steps or ingredients!), it’s nostalgic for me, delicious to all egg salad lovers and mayo-free! 

INGREDIENTS

Protein

  • 8-12 eggs

    • the amount of eggs depends on how much you want to make. 

  • ⅓ c. Fage Greek Yogurt (any percentage of milk fat is OK)

Carbs

  • a quarter to a third of a yellow onion : chopped

  • 2-3 stalks of celery : chopped

  • Capers : to garnish 

Spice

  • 1-2 Tbsp dijon or yellow mustard

  • 3 Tbsp dill : chopped

  • salt & pepper : to taste

INSTRUCTIONS

Hard boil your desired number of eggs—if you don’t already have a preferred way to hard boil your eggs, check out our favorite way here! While your eggs are cooking, chop up your onions, celery, and dill.

Once your hard-boiled eggs have chilled, peel their shells off and set aside. After all your eggs are peeled, either use an egg slicer or chop up your eggs—whatever you prefer—and place them in a medium to large bowl. Here’s a link to an egg slicer if you’re in the market for one. 

When all of your eggs are sliced, add in your greek yogurt and preferred mustard. Stir to combine all ingredients. Add in your onions, celery, and dill. Stir well to combine. 

Toast your favorite slice of bread and create an open-faced sammy with some extra garnishes on top! We prefer to add some extra dill, capers, and flaky salt—we prefer virgin islands sea salt!
