WORLD FAMOUS >> Lioness Fruit Pizza Cookies
Seriously World Famous… I mean self proclaimed of course, but aren’t we all?
In all honesty these are a BIG hit and always a crowd favorite. So many great memories with this yummy dessert. From childhood birthday parties, 4th of July USA Flag themed FP, missing trays completely gone with just crumbs left, and constantly getting asked for the recipe. So here it is the Lioness Fruit Pizza Cookie — normally a fruit pizza which is the same ingredients just on a sheet pan vs individual portions.
We made the cookies to help prevent the FP coma that is most commonly endured after the first bite.

SUGAR COOKIE CRUST
Protein
2 Eggs
Carb
1 cup Granulated Sugar
2 1/2 cup Paleo Flour <<Bob’s Red Mill>>
1/3 cup Flax Meal — good source of fiber…bonus!
Fat
3/4 cup Butter - soft
2 tbsp Coconut Oil
Spice
1/2 tsp Sea Salt << we used our favorite >> << VIRGIN ISLANDS Salt Co >>
1 tsp Baking Soda
1 tsp Vanilla Extract (use the real stuff not imitation)
CREAM FROSTING
Carb
2 tbsp Orange Juice : freshly squeezed is best!
1/4 cup Brown Sugar
Orange Zest
Fat
1 package Cream Cheese : soften
Spice
1 tsp Vanilla Extract
Directions
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or coat with coconut oil.
In a large bowl with a standing mixer or hand mixer, cream the butter and sugar together until light and fluffy, about 1 minute.
Add in the egg and vanilla extract; beat until combined.
Add in flour, baking soda, baking powder, and salt.
Mix until just combined, and forms a large ball of dough.
Roll dough into 1" balls.
Place on baking sheet, about 2" apart.
Bake for 10-11 minutes, or until cookies have set.
Allow the cookies enough time to cool off.
For the frosting mix all ingredients in small bowl, until creamy.
Once the cookies or sheet pan has cooled spread on the frosting evenly.
Then the best part — decorating!

** Our other favorite way is to make the cookie crust in a sheet pan.
Take the cookie dough and spread evenly across the pan.
Bake at 350 for 15-18 minutes or until golden brown.
Wait until cooled to add the frosting, then decorate.
