blended tuna open-faced sandwich!
if you’ve been around here for a minute, you know we love a simple + delicious meal. well this is one of our favorite easy lunches to make with ingredients we typically have on-hand. I love a tuna salad sandwich (top 3 fav sandwich, for sure!) but I wanted to spice it up a little—literally + figuratively.
INGREDIENTS
1 can tuna
2 tbsp greek yogurt
juice from wedge of lemon (about 1/4 of the lemon)
3 tbsp pickled red onions
2-3 tbsp sweet + spicy pickled jalapenos :: depending on how spicy you like it!
1-2 sprigs of dill
salt + pepper
slice of sourdough :: toasted
INSTRUCTIONS
you will need a little blender (we love this food processor!) but a nutribullet or something similar will work just fine :-) add everything but your sourdough to the food processor and blend until a little chunky or fully smooth (dealer’s choice!) once everything is all blended up—grab a plate, place your toasted sourdough on there, add your blended tuna mix, and top with whatever you’d like! I typically like to add some flaky salt + fresh ground pepper to the top and I’ll add microgreens, or dill, or pickled red onions, or a combination of the three! whatever you’re feeling, you really can’t go wrong here.
