Protein

1 lb. Ground Turkey

1 Egg

Carbs

½ c. Dried Prunes : diced

⅓ c. Green Onions : sliced

⅓ c. Cilantro : chopped

3 Tbsp Fresh Ginger : finely chopped

¼ c. Bob’s Red Mill Gluten Free 1-to-1 Baking Flour

¼ c. Ponzu Sauce

1 Lime : squeezed

2 Tbsp Trader Joe’s Coconut Aminos

1 Tbsp Trader Joe’s Umami Seasoning

Fat

⅓ c. Trader Joe’s Sesame Oil : to cook the meatballs in

2 Tbsp Sesame Seeds

Spice

¼ c. Chili Garlic Sauce : less if you’re not a spicy fan!

Directions

Chop up prunes, green onions, cilantro, and the fresh ginger and combine together into large mixing bowl. Add liquids, and remaining ingredients to the bowl. Mix well. Once mixed, let the mixture cool in the fridge for 30min to help them become less sticky.

Make 1 1/2 inch balls, make sure they’re all similar in size.

Pan Fry

Heat pan on medium-high heat. Drizzle the sesame oil onto the hot pan. Place your meatballs into the pan and be sure to leave plenty of space between each. Cook for about 20 minutes total (~10 minutes on each side) or until completely cooked through. Be sure to flip & cook each side of the meatball until it reaches a nice golden brown color.

Air Fryer

Place meatballs inside air fryer, drizzle with sesame oil. Cook at 400 degrees for 22 minutes, flipping over at the 11 minute mark.

Bake

Place meatballs on pan, I like to use tin foil to help with clean up. Pre-heat oven to 400. Drizzle meat balls with sesame oil and cook for 24 minutes. Flip at the 12 minute mark.
