*the* winter seasonal salad

we made this salad for Christmas dinner and WOW. it was even better than we expected. we’ve made it three times since already and don’t have any plans to stop. plus! it’s super easy, you just throw everything together and enjoy!

INGREDIENTS

Protein

  • 1 package : bacon (no nitrates or nitrites!)

  • 1/4 c. parmesan cheese : shaved

Fat

  • 1/4 c. extra virgin olive oil (EVOO)

  • 2 medium avocados : sliced into cubes

Carbs

  • 2 c. shaved brussels sprouts

  • 2 c. kale : chopped if purchased whole

  • 1 bunch of fennel : chopped

  • 1/4 c. pomegranate seeds

Spice

  • salt+pepper : to taste

  • 1 medium lemon : juiced

  • 2 tbsp whole grain mustard

INSTRUCTIONS

it’s a pretty simple process here! the thing that will take the most time is shaving the brussels sprouts (use a mandolin if you have one!) and cooking the bacon. cook the bacon ahead of time if you’d like. start by cooking the bacon per the packages instructions. while that’s cooking, shave your brussels sprouts, chop up your kale and your fennel, then add it into your salad bowl. mix them together to combine. once your bacon is done, take it out of the oven and let it cool. once cool, chop into small pieces. add your bacon, pomegranate seeds, and avocado onto the salad. mix together the EVOO, lemon juice, whole grain mustard, and s+p in a jar, shake it up and pour your salad dressing mixture over the top of your salad. grab your tongs or your salad spoons and mix it all up! top it off with shaved parmesan and enjoy!
