greek lamb meatballs recipe
my favorite type of cuisine is easily mediterranean, and one of my favorite foods is meatballs (so versatile!) so we decided to combine them and WOW. this might be our best one yet. the mint allows this dish to still feel and taste so fresh.
INGREDIENTS
1lb ground lamb
1/3 red onion : finely chopped
3 cloves garlic : minced
2 tbsp flat-leaf parsley : minced
2 tbsp fresh mint : minced
1 egg
2 tbsp panko breadcrumbs
1 1/2 tsp salt
1/2 tsp freshly ground black pepper
INSTRUCTIONS
start by preheating your oven to broil.
in a medium bowl, combine all ingredients. once combined, form the meat mixture into golf-ball sized balls.
place the meatballs ~2 inches apart on the baking sheet.
when you place the baking sheet into the oven, allow a few inches between the pan and the heat source.
broil the meatballs for 5 minutes total, turning them once halfway through.
let cool and enjoy!
we strongly suggest pairing this with our tzatziki recipe! our favorite way to enjoy this meal is over a bowl of rice and greens with tzatziki as the dressing. add pickled red onions, cucumbers, and kalamata olives if you want some extra yummies !
